I’ve been making this smoothie a lot lately, it’s got to be one of my all-time favourite drinks – it’s a combination of sweet, tangy, savoury and most of all, it’s so refreshing. Perfect anytime of year but particularly once the weather starts warming up! It’s half-way between a smoothie and juice, as I strain half of it to extract just the juice. This is entirely optional of course, it’s just something I personally prefer!

Ingredients:
- one green apple, cored
- two large celery sticks
- a quarter of a cucumber
- juice of one lime
- a one-inch piece of fresh ginger, peeled
- 6 large mint leaves
- a handful of baby spinach
- 250ml pineapple juice
- 200ml cold water
Method:
- Blitz all the ingredients in a blender until well-combined, smooth and the liquid is frothy.
- Pour half of the smoothie straight into a large jug. Next, using either a nut milk bag or sieve, pass the rest of the smoothie through so only the juice goes into the jug. This isn’t necessary but I prefer the half and half of juice and smoothie, which I find makes it more pleasant to drink.
- Serve and enjoy!


As soon as I drink this smoothie, I feel an almost instant glow from within. It’s like my body is thanking me for the goodness! If you make this I can guarantee you’ll feel the same once you’ve tried it!
